Insta Worthy Meal: Salads

What better way to launch into your summer vacation than with a Instagram worthy meal? Make that TWO recipes! You can up your food game, and stay healthy! And for a bonus you can grow some of these ingredients in your backyard or in your room or even in the back of your refrigerator…

Speedy Instagram Salad Brunch

The Ingredients you will need:

  • Anything in your fridge that might go bad soon.
  • Things like a variety of leaf vegetables, dried fruits, fresh herbs from your own DIY terrarium (find out how to make one HERE)
  • Fresh fruits and vegetables that are looking less than fine.
  • Other things like eggs and dressing need to be fresh made/bought.

First: mix all your ingredients in a pretty bowl (I used a China porcelain one)
Pour in a dressing of your choice. I used balsamic vinegar and low sodium soy sauce mixed with raspberry juice.
Top off with anything you like. I did steamed green beans, shredded lettuce and half an egg.
I added a side of miso tofu soup. These can be bought as take out, or bought as a powder in grocery stores (International Aisles)

-Assorted garden leafs (boxed or homegrown)
-Vinegar (Balsamic is personally my favourite!)
-Favourite toppings (I used cranberries and walnuts)
-Optional: a dollop of salsa for a extra tastiness

Now mix everything together… and you’ve got a explosion of taste!
